Nice Pictures Of Shrimp photos

While playing around hunting something on my Mac Pro, I was happy to find Photo Booth; so, now I can take still photos with my iSight camera which is one of the reasons I bought the camera in the first place. So, as you can see, I'm a happy camper.

I also played around with about 22 photos in iPhoto until I finally enhanced this one and decided I liked it. Wouldn't you know, it's the first one I took. I had to crop it before I could make the decision to go with this one.

I had turned on the 2 fluorescent lights in my computer cabinet just to give some extra light. It actually washed me out, but I learned that's a good thing. It's better than Botox. :-)

1. I have lived in Georgia (USA) all my life except for 2 years when I attended Lee College (now University) in Cleveland, Tennessee. I majored in music with keyboard as the primary and voice as the secondary major. I flunked out of that major after 2 years and switched to English Education. Later I got a master's and specialist's degree in Elementary Education. I do not plan to work toward any more degrees.

2. My favorite soft drink is Diet Dr. Pepper. I don't know why it's not offered in restaurants because it's the BEST drink. It's similar to a Cherry Coke.

3. I grew up on a small farm just east of Atlanta, Georgia and picked cotton, peas, and beans as a child; although, Mother would tell you that I didn't really do that much work.

4. I do not personally have any children, but I have taught public school for 37 years and am around children for 6 hours for 180 days of every year. In addition, I have some friends who are young enough to be my children. We enjoy doing stuff together especially traveling.

5. Even though my family never had much money, we managed to take some vacations together. I always loved going places. As I got older, we were able to go further away and stay for a longer time -- like one week. I especially remember going to the Grand Canyon, Yellowstone, and NYC. I must find the time to scan all those slides and upload them to flickr.

6. I used to be able to bend over and touch the floor flat-handed without bending my knees. Now.....well, forget about that!

7. I have attended church almost every week of my life. There are times when I'm on vacation or sick that I don't attend, but there has never been a time when I was NOT a part of a church family. Being a Christian and knowing Jesus personally is what gives me HOPE and keeps me "keeping on." I have sung solos and with a larger group in church since I was about 7 years old.

8. I cannot swim.

9. I usually have several cameras and video cameras in my purse.

10. I am forced to drive past many photographic opportunities because of lack of time, no place to park my car, and don't have my DSLR with me.

11. My husband was a good friend, someone who could give me advice about stuff such as which camera to buy.

12. Besides the USA, I've been to Canada, Mexico, the Bahamas and other Caribbean Islands, England, Belgium, the Netherlands, Switzerland, Germany, and France. I want to travel more in the future.

13. I don't cook, and I am a very messy housekeeper. I cannot sew, knit, or crochet. I don't do "crafts."

14. My family had 2 Studebakers when I was growing up.

15. I love okra (boiled or fried), onions (raw or cooked), tomatoes (fresh or canned), corn (creamy or on the cob), fried chicken (white meat only), mashed potatoes (with gravy or garlic), anything chocolate, Mars bars, Chinese food (fried wontons, hot & sour soup, egg rolls with hot mustard and plum sauce, stir-fried dishes), steak, fajitas, Texas Pete hot sauce, vinegar-style barbecue sauce, cinnamon rolls, fudge ripple ice cream, guacamole, sweet potatoes, shrimp (boiled or fried), tartar sauce (very particular about the ingredients), pork chops (grilled), chicken salad, many fruits, yogurt, and cookies.

16. I don't like mushrooms, anchovies, liver, dark-meat chicken, black olives, sardines, tuna, mullet, gizzards, and chitterlings.

Spaghetti with Sauce.

Cooking Directions:
1. Get left-over food from apartment-mate (thanks Jon Chan). This includes the spaghetti and the sauce (I think the sauce has shrimp so that's even better).
2. Put the spaghetti on a plate, and pour the sauce (make sure it's heated) on top of it.
3. Find things to make the plate lo...ok nice - onion, green onion, raspberry, etc.
4. Enjoy!

Vegetarian Okonomiyaki (Osaka style)

Makes: 7 to 8 size 5-inch pancakes

•2 cups boiling water
•1 tsp low-sodium vegetable stock powder (or equivalent stock cube)
•1 tsp low-sodium miso paste
•1 egg or equivalent egg substitute
•1 small potato, grated
•1 tbsp dark sesame oil
•1½-2 cups plain white flour (all purpose is fine)
•2 tbsp dried cilantro
•1½ cups finely shredded cabbage
•½ cup finely shredded beetroot leaves
•½ cup finely shredded carrot
•½ cup finely cut broccoli (I only used the flowers, but the stalks are edible too)
•½ cup finely chopped green onion
•Oil for cooking
•Soy sauce, tonkatsu (or A1 steak sauce) or chu-noh or okonomiyaki (or yakisoba sauce) sauce, Japanese mayonnaise

Optional non-vegetarian additions: bonito flakes, small dried shrimp, furikake

Directions:

1. Dissolve the vegetable stock & the miso paste in the boiling water. Add the broccoli & the carrots in the boiling water. No need to cook the vegetables all the way through, only until the water boils. Turn off the stove.
2. Strain the broccoli & carrots from the stock water. Set aside the stock water to cool.
3. Mix in a bowl: cooked broccoli & carrots, shredded cabbage, beetroot leaves, & 1/4 cup of chopped green onions. Set aside.
4. Mix: egg, stock water, grated potato, sesame oil, dried cilantro, & the rest of the green onions. Slowly sift the flour into the batter until you have a rather thick consistency (you may not need all of 2 cups of flour).
5. Heat up a non-stick griddle or frying pan over medium high heat with a little oil.
6. Pour in a ladleful of the batter, thin it out to create roughly a 5-inch diameter circle. Sprinkle the mixed vegetables (of broccoli, carrots, cabbage, & beetroot leaves) on top of the still wet batter.
7. Drop about a tablespoon of batter to cover the vegetables.
8. When the edges look a bit brown, carefully flip the okonomiyaki over. Press down firmly, & lower the heat to about medium. Cook for at least 10 minutes, pressing down occasionally, until it's thoroughly cooked through.
9. Serve immediately with your preferred combination of sauce. On the picture, I spread tonkatsu sauce, Kewpie (Japanese mayo), furikake, & I sprinkled some leftover vegetables.

Van Huy before surgery

The first three days of surgery have been quite a success. It has been quite an adventure, first with 2 suitcases MIA until yesterday, then the autoclave machine going down (but now back up and running thanks to the hospital's engineer), the difficulty contacting friends and family in the States, and of course the food: fish and shrimp heads, fish sauce, squid, and all sorts of funky fruits! All team member's spirits are high and we have really bonded as a team towards our goal of helping this unfortunate children.

This is Van Huy. As you can tell he has a pretty intense bilateral cleft lip. He is scheduled for surgery later today and i will try to ge a picture of hm after he emerges.
