A vegetarian curry dish closer to a stew, featuring tomato, onion, plenty of garlic and ginger, kidney beans, carrots, and celery. Served over rice and dolloped with some tofu/ sour cream on top.
I had some of Galateadia's chutney (not pictured) with this. I forgot I had this unopened jar of pineapple mint and it was sooo good with this dish.
