Arroz a la inglessa

This dish, properly called Arroz a la Cubana (Cuban Rice), but since I cooked it and I'm not Cuban ... is very popular here and is even served in restaurants. Generally, it will come with chips, but, as you can see, we British do not eat chips with everything! :) It seems a strange combination at first, but is much nicer than you imagine. I'm certain you don't need a recipe to make rice, fry an egg and some bananas. After taking the photos in Las Cuevas the other day, I was sent home with the bunch of bananas that I bought for eating, a bag of overripe ones for cooking and a huge bunch of these fresh ones.

Apple Cobbers - Ready for Baking

My evening's experimental apple cobbler. Apples that have been topped and hollowed out with a melon baller. The cobbler topping is:
1.5 cups oats
1/2 cup flour
2 tsp cinnamon
Pinch of salt
1/2 cup brown sugar
Cut with 1/2 cup butter
Fill the apple with topping, top with a teaspoon or so of butter, and bake at 350 for about 45 minutes, or until they're soft when squeezed.

Domestic Marathon

After 7 hours in the kitchen, this is what I had to show for myself: two dried fruit and nut loaves (the muffins were from leftover batter), a pan of gluten free brownies with walnuts, peanuts and chocolate chips, and a batch of apple and rye sourdough bagel dough.

Not pictured was what sucked up most of my day - the chicken-ancho cacciatore made completely from scratch (from jointing and skinning the bird to chopping the veg to stewing it all together). A labour of love - and the family stuffed themselves full!
