Yum. My boys love this dish and somehow, a few simple ingredients thrown together look so elegant and appetizing. This easy snack for two takes mere minutes to make.

On these final days of Indian summer, as the air becomes crisp and we receive the last gifts of Colorado’s glorious peach harvest, we all celebrate the end of one season and the beginning of the next. For that, it doesn’t matter what your religion is.

I met my friend Mary on the very first day of college. She is one of the smartest, funniest people I know. A savvy foodie, she and I spent some good times cooking and eating our way through New York City in our younger days.

Everything in these chewy gluten-free bars can be sourced at your local bulk foods store for much less than a health food emporium!

To me, fall means baked apples. Simple. Delicious. Sweet. Warm. Comfort.

The other day, my older son asked if we could partake in our favorite fall ritual and bake up some apples. I was busy with a bunch of other cooking projects so he took matters into his own hands, cored a couple of apples, stuffed them with yummy ingredients, then handed them to me to place in the oven. It’s just that easy, really.
